Jalapeno Popper Stuffed Chicken Burgers

So trying to eat healthier so we made chicken burgers for dinner last night. . . but of course plain old chicken burgers are BORING so we fancied them up.

Jalapeno Popper stuffed chicken burgers (makes 4 1/2lb burgers)

2 lb ground chicken
1/2 small red onion, grated
1 C 2% sharp cheddar cheese, shredded
6 oz whipped cream cheese. room temperature
2 med. Jalapenos. diced (remove ribs and seeds for less heat.. . .ALWAYS WEAR GLOVES UNLESS YOU WANT YOUR HANDS TO STING FOR HOURS)
Buns of your choice. (we used nice onion rolls from the grocery store bakery)

first mix together the chicken and the onions until well combined.

in a separate bowl mix together  shredded cheese, cream cheese and jalapenos until well combined.

Separate chicken mixture into 4 1/2 lb portions, then divide those portions in half. Flatten the portions into a patties. Take ~3 oz of cheese mixture, make it into a ball repeat until you have 4 balls of cheese mixture. Flatten a ball of the cheese mixture onto one of the patties, then cover with another patty and gently mush the edges together enclosing the cheese. Repeat with the other 3 portions.

Spray grill with cooking spray generously so burgers don't stick. Cook approximately 7 minutes per side. Serve on a bun. . .yum!
