Jalapeno Popper Stuffed Chicken Burgers

So trying to eat healthier so we made chicken burgers for dinner last night. . . but of course plain old chicken burgers are BORING so we fancied them up.

Jalapeno Popper stuffed chicken burgers (makes 4 1/2lb burgers)

2 lb ground chicken
1/2 small red onion, grated
1 C 2% sharp cheddar cheese, shredded
6 oz whipped cream cheese. room temperature
2 med. Jalapenos. diced (remove ribs and seeds for less heat.. . .ALWAYS WEAR GLOVES UNLESS YOU WANT YOUR HANDS TO STING FOR HOURS)
Buns of your choice. (we used nice onion rolls from the grocery store bakery)

first mix together the chicken and the onions until well combined.

in a separate bowl mix together  shredded cheese, cream cheese and jalapenos until well combined.

Separate chicken mixture into 4 1/2 lb portions, then divide those portions in half. Flatten the portions into a patties. Take ~3 oz of cheese mixture, make it into a ball repeat until you have 4 balls of cheese mixture. Flatten a ball of the cheese mixture onto one of the patties, then cover with another patty and gently mush the edges together enclosing the cheese. Repeat with the other 3 portions.

Spray grill with cooking spray generously so burgers don't stick. Cook approximately 7 minutes per side. Serve on a bun. . .yum!

Chocolate Chocolate Chip Cookie Dough Cupcakes with Cookie dough flavored Buttercream

SO I haven't used this Blog in 7 years, and I just started a new blog Things that Annoy Tine and so I thought I'd use this one, to post recipes, crafts, and other stuffs that don't annoy me :)

And it begins. . . .

So it was F-Bomb's Birthday and I asked "What kind of cupcakes do you want?" and she showed me a Pinterest pin with cookie dough cupcakes. . and I said "I can do that"  So here they are. I cheated a little and used a box mix, but hey they taste good and it is just quicker. Also they were for F-bomb so they had Vanilla Vodka in them. You can make them without if want or need arises.

Chocolate Chocolate Chip Cookie Dough Cupcakes with Cookie Dough flavored Butter cream

Ingredients

14 oz  Chocolate chip cookie dough. ( plus more for garnish cookies if desired)You can use the tube, bucket, or homemade. your choice)
1 box Chocolate cake mix ( you could use Vanilla or any flavor really- F-bomb wanted chocolate, so I made her chocolate)
Ingredients on the box to make the cake-(usually eggs, water and oil) I used 1C Vanilla vodka in place of the water and Applesauce in place of the oil.


Icing Ingredients

2 Sticks (1C) softened butter
1/2 C Brown sugar (packed)
2 t.  Molasses. 
1 t. Vanilla extract
5 C powdered sugar
1/4C milk.


Directions
Roll the cookie dough into 24  aprox. 15g balls of dough and freeze on a cookie sheet overnight or for at least 2 hours. The dough needs to be frozen so it doesn't get too cooked and crunch while the cupcakes bake.

Mix the cake mix according to the directions on the box. Fill each cupcake tin 2/3 of the way full with batter. Put on ball of frozen dough into each cupcake and press into the batter. Cake will bake up around cookie dough ball. Bake for 20 minutes or as long as it says on the box. Poke with a toothpick into the cake part to check or doneness. Let cool 10 minutes in pan, then completely on wire racks before icing.

Mix softened butter, brown sugar molasses and vanilla in the bowl of a stand mixer (or hand held mixer if you don't have a stand mixer). Add powdered sugar one cup at a time. Add milk a little bit at a time to get desired consistency of icing.

Frost cupcake, garnish with chocolate chips and/or mini chocolate chip cookies.

well i cant say it's not been a while since i posted in my blog here. . .sometimes life is too busy to blog, but now with my new macbook i have the internet with me all the time (given there is wireless access ;)) So what's new? 

Looks like I last posted in June, so. . .july, Nothing to memorable. August. I started school again for the semester. Septemeber, Kickball was going strong.. . .October, I turned 30 and Afrikagirl came home from Afrika!!! Kickball ended with Team Underpants in 4th place. Right in the middle where we belong. November, I went to see Gay French Circus (aka Circe de Solel). Parents went to Hawaii leaving me alone for 2 weeks. HATE THAT!  December. .Surprisingly I passed my classes, despite the fact I sat in the back of one of them and text messaged the entire time. .Christmas.. .that's about it. Oh and we got a new manager at BBB. January, Storytime started again. I was happy to see my kiddlings after a month break.  I made a new CD with some new action songs on it. It was great. 

February. . .BBB took away storytime from me. New Manager doesn't seem to like me and i think it's a form of punishment, but then Burbur has that ass. crm position and I suppose they do need to justify it by giving her shit to do. . .but why MY storytime! Dude it was the one thing I was really good at.  Now I miss all the kiddlings. I did get to see a few Tuesday, because they actually let me work on a tuesday which they hadn't in like 3 weeks. 

Lost started again! Wohoo! We also got a Wii and a DVR so I never have to miss Lost or Torchwood again. 

And now it's March. I got a new MacBook. That is what I'm on now. That was good. I can't think of anything else right now. Kickball starts again in a month and I can't wait. 

I don't want to get in trouble, but stupid people are all around me!

so I was at BBB on tuesday. I did my storytime, I did the rest of my work. I'm having a good day and the BBB Mgmnt calls me down to talk to me. (before I finish this story, Noelle, It is not because I work at BBB, it is because the Mngment at BBB don't understand me) Anyways, a few days before that I saw a small child (like 6ish) with out shoes, now anyone with common sense knows No Shirt, No Shoes, No Service! But anyway, I say, "Is this your son?" and the stupid lady said yes, and I say "He needs to wear his shoes." She goes, "Is this a policy?" In my head i think, duh of course, if not I wouldn't have said anything. But, I acutally said, yes. for health department reasons, we have a cafe and all. Then she asks if we have it in writting. I turn and roll my eyes and go ask Miss U if we have anything like that in writing. Then I just don't go back over there. So this lady complained about me to the mngers.

So I spend over an hour being "talked to" and crying in the office. I was supposed to be off at 5 and I didn't clock out until 6 when Flick left.

Moral of the story is, I hate stupid people, and BBB sucks! There NOELLE I've said it. I hate the BBB but they pay my insurance and they pay my bills so I'm stuck!

Saturday morning going to work at the lovely big box bookstore, get there early, find out the cafe dude is a no show. . ..that means oh yeah Tinetastic in the cafe! I HATE THE CAFE! I escaped! Stop trying to throw me back in!!!! so to vent with other cafe worker, I draw a picture of original cafe dude drowning in a Giant cup of BBBcafe coffee. I thought it was funny. other cafe worker thought it was funny. When Contini got there he thought it was funny, although I did draw a picture of Contini Panini because he was half hour late from saving me from cafehell. Anyway, Sunday, I go in and BBBBoss proceeds to yell at me about how it was inappropriate to draw such a picture. . .My response? It was a joke and like there is really a cup of coffee big enough to drown cafe dude in, anyway. She didn't like that too much. . . .OH THE FUCK WELL! Don't stick me in Cafe with no warning, or better yet, don't stick me in cafe at all.

Sunday! Stop at the farm stand on my way to BBB because i had run out of time for breaky. I ask the girl behind the counter if the Orange Cranberry Muffins have nuts. (I am allergic to Walnuts, causing my tongue and sometimes lips to swell nothing anafalactic) The girl behind the counter says No so I say okay and order the Orange Cranberry muffin. I go out to my car with my coffee like beverage and my muffin and drive along to work. Once in town a rip off a piece of the muffin top. . . to my amazement: WALNUT! So I immediately stop eating my yummy muffin and debate about going back. I was already running later than I'd like so I didn't, I did however stop at the Hess and get PopTarts just so i wouldn't be starving by the time lunch came. I called the farm when I got to work and complained. They did nothing. . .Imagine if I'd been deathly allergic. I could died or caused an accident since I was driving to work. GAH!

$200. .That's like a car payment!

so I entered WRRV's big bribe not really expecting my name to be called. . .but then today at 7:20am (I made sure to specifically get up to listen) they called MY NAME! Now I am $200 richer! isn't that exciting.

Before I get to learning

here i sit in class. . .well before class, but in the class none the less, missing the Mac computer i had after working on this one. I think this class is going to be interesting. . .okay i hope it will be. I just met the teacher. she seems nice.

Flick told me yesterday that the end of season party is July 14th. Yeah, I'll be in California that weekend. Well from the 11th to the 16th. Bey said "What are you going to do?" and I said "Not go to the party." She then informed me she was being rhetorical. oooops.

So I've been taking Zedia. It's been making me real tired. I've slept like 8 hours at night then taken 4 hour naps. . . .(I just typed years. I wish I'd taken 4 year naps)

Class is starting now.
